Fior di Montalcino Pecorino is produced in Buonconvento by the Chironi family, at the Le Sale farm, which consists of almost 100 hectares of arable land and 4 farmhouses.
Since 1970, our sheep have been grazing on land directly cultivated using organic methods. The farm has been converted to organic farming with ICEA certification since 2015.

Fresh, semi-aged, and aged Pecorino cheese

The Fior di Montalcino farm produces three types of Pecorino di Montalcino® cheese using only their own milk. The farm also produces all the fodder and cereals (corn, barley, beans, oats, triticale, and soft wheat) needed to feed the animals.
